Caesar Rimmer

The story of 1858 began in 2005, sparked by a simple idea and a love for the classic Canadian Caesar cocktail. It all started with Steve and Vanessa Walker, who spent countless Sunday mornings perfecting their own Caesar mix after nights out with friends. Their custom ‘mix’ became a staple in their fridge, and they soon earned a reputation as the "go-to Caesar makers" for family and friends.

After gifting their Caesar elixir to loved ones for years, a friend suggested they share it with the world. That suggestion led to the opening of 1858 Caesar Bar in Collingwood, Ontario, in July 2017. Steve and Vanessa saw it as the perfect opportunity to introduce their unique Caesar Mix—originally named Walker's OneShot (after their last name and the fact that it only takes one shot of the mix to elevate your clam juice and liquor of choice).
